Rice flour has no limits on the maximum permissible concentration (MAC) or LD50, as it is an absolutely natural product that has not undergone any chemical processing. When using rice flour, the volume of the final product increases. At the same time, there is no starchy taste in the overall structure of the final product and there is no change in the taste of other components. Rice flour has a high moisture-binding capacity and can be used as a natural thickener and stabilizer in the production of hard and soft cheeses, processed cheeses, boiled condensed milk and yoghurts. Rice flour can also be used as a thickener for ice cream. Experimental work is underway on the use of rice flour in the production of artificial milk.
